Position Overview

The Food & Beverage (F&B) Manager is responsible for overseeing all dining and beverage operations at Kep Merli, ensuring a world-class culinary experience for our guests. This role requires a strong leader with a passion for fine dining, exceptional service, and sustainable gastronomy. The F&B Manager will manage restaurant and bar operations, maintain high service standards, and drive guest satisfaction, profitability, and operational efficiency.

Key Responsibilities

F&B Operations & Guest Experience

  • Oversee the daily operations of restaurants, bars, in-room dining, and special events.
  • Ensure all food and beverage services meet five-star luxury standards.
  • Maintain a seamless guest experience by upholding impeccable service and ambiance.
  • Handle VIP guests, special requests, and dietary accommodations with attention to detail.
  • Monitor guest feedback, reviews, and service ratings to continuously improve the experience.

Team Leadership & Training

  • Recruit, train, and mentor restaurant, bar, and service staff to uphold luxury hospitality standards.
  • Implement ongoing staff training programs focused on service excellence and product knowledge.
  • Foster a guest-first culture, ensuring high levels of team motivation and performance.

Financial & Revenue Management

  • Develop and execute strategies to maximize revenue while maintaining exceptional quality.
  • Oversee budgeting, cost control, and inventory management for all F&B outlets.
  • Monitor and optimize food and beverage costs, waste reduction, and supplier efficiency.
  • Collaborate with the marketing team to create promotions, seasonal menus, and special events.

Menu Development & Quality Control

  • Work closely with chefs and sommeliers to develop innovative and sustainable menus.
  • Ensure the highest quality ingredients and presentation standards are met.
  • Maintain compliance with food safety, hygiene, and health regulations.
  • Support the integration of local and organic produce, reflecting Kep Merli’s eco-conscious philosophy.

Event Planning & Special Experiences

  • Oversee the execution of private dining, weddings, corporate events, and VIP experiences.
  • Collaborate with the events team to create memorable culinary experiences.
  • Ensure seamless coordination between kitchen, service staff, and guest requests.

Qualifications & Experience

  • 5+ years of experience in F&B management at a luxury hotel, resort, or fine-dining establishment.
  • Proven ability to lead and inspire a high-performing hospitality team.
  • Strong expertise in restaurant operations, menu planning, and wine/beverage service.
  • Experience with budgeting, cost control, and revenue strategies.
  • Excellent communication skills in English and Albanian (additional languages are a plus).
  • Passion for sustainable gastronomy and eco-friendly hospitality.
